Can you change the width of individual cells?

No.

Column widths and row heights are the properties of the wntire rows and
columns.

You can formatcellsalignment to "center across selection" or you can
.......shudder......Merge cells, which can cause no end of problems when
trying to manipulate data like copying, cutting, pasting, filtering and a
host of others.
