2007 excell, new to me; spreadsheet buttons greyed out??????

Upgraded to internet explorer8, mistake, would love to take it off?
But now documents/attachments that were 2003 word/excel are now 2007 and the
excel all the buttons are greyed out and do not function, HELP PLEASE?????
