in Excel 2007?

Do you really mean two instances of Excel, or do you mean two
workbooks in the same instance of Excel? For two instances of Excel,
start Excel, click the "restore window" button (the button between the
minimize button and the 'x' close window button), drag the Excel
application to the desired monitor. Then start the second instance of
Excel and do the same, dragging the app window to the other monitor.

To view two workbooks in the same instance of Excel, start Excel,
click the restore button on the Application window, not the workbook
window, resize the app window to cover both monitors. Then, open the
first workbook, click the restore button in the workbook window not
the app window, drag that window to the region of the app window on
the first monitor. Resize as desired. Then, open the second workbook,
do the same thing, and move it to the second monitor.
