text has all changed to various characters
 

All the text in my spread sheet has been changed to characters such as the
following;

牡åœ*ç�¡á‘¨à¸€á‡¿á¼€

can this be changed back?

it appears that accidentally fonts of your spread sheet has been changed. u
need to restore the same by :
select the entire spread sheet
select format-font- and apply desired font, preferably arial

and u will be at home.
