how do I stop cursor selecting multiple cells at once?
 
When I enter a blank cell, the next one gets included in the same entry area.
I just want the active cell to be highlighted and worked on...?

Some XL 2007 users report that slightly altering the zoom level (tool in
lower right corner of Excel window) stops this happening.
