Is there any way to make the cursor go to the right instead of down after
hitting enter?

Tools|Options
Edit Tab

In the drop down select the direction you want to move after enter.

Probably. But how to do it will depend a bit on what version of Excel
you're using and you didn't say. :-)

Change cursor direction
 
or, if using 2007 hit the Office Button, then the Excel Options button
at the bottom of the dialog, then the Advanced button and change the
direction in the "After Pressing Enter, Move Selection" area
