How can I determine the number of equal (=) signs are in my
spreadsheet?

Presuming 1 per cell , Find "=", Find All

Each cell contains varying numbers of = signs.

Open a copy of the file and do a find and replace, say "=" with "#" ,
Replace All, it will give you a count of all the replacements.
