IF-THEN data entry

How can I make a cell with certain data equal a set number for equations. I'm
using Excel 2003, and I don't even know if what I'm trying to do is possible.
I need to know if I can make a cell say something like Xam-Xpm, and have it
recognized as a certain number for totaling hours in an equation.
