How do I create template with unalterable headings

How do I create template with unalterable headings
If I understand you question correctly, you can 'lock' most cells and objects
in excel. All cells are locked by default in excel, but this is only applied if you choose to 'protect worksheet' (not workbook, important). Select the cells or ranges of cells you want to be able to edit, right click -- format, --- protection. Uncheck 'locked.' Protect your worksheet, (there's some options there as to what users can do with locked or unlocked cells) and add a password of your choice. If objects are not locked by default, I believe you can right click them, --- format and set protection for them as well. I hope this was what you were after.
