I can hardly see what cells I'm choosing. Can I change this?

It's a version 2007 thing and no fix has been issued to date.

Use Chip's Rowliner as Jim points out.

On my ThinkPad display, the selection color is so light, it's
indistinguishable from unselected cells.

This is so bad it makes Excel 2007 unusable.
