I am currently trying to create a chart based off an excel spreadsheet where

You would just subtract one date value from another.
If cell A1 has 10/15/1979 and cell A2 has 3/11/2008 the formula would be: =A2-A1 With 10375 being the number of elapsed days. You will most likely have to format the cell with the function as a number as it will default to a date format.
