When I open a data file by clicking on the file, excel opens but I then have
to go to open file then click on cancel for the file to open

Seems to be a bug in xl2007 that isn't fixed yet.

Opening Excel 2003 in Excel 2007
 
I use Excel 2007 SP1. When I double click an Excel 2003 workbook or an Excel
2007 workbook, Excel loads and opens the workbook. I've never experienced
the problem of Excel not opening a workbook after loading. Excel 2003 did
the same thing.
