Can I hide certain information within a workbook?

excel 2003.
I was wondering if I could have another chart within the workbook that I can
only see. Therefore, when information is entered into the visible chart, I
can check if any changes have been made versus my hidden chart.

Excel doesn't really have this kind of protection. If you share the workbook
with anyone, then they (if determined enough) can see all your data and charts.

You can make the Chart Sheet or Sheet Object on which that chart is embedded
xlVeryHidden from VBE, then password protect your VBA Project.
