Excel changes the year from 2007 to 2003 when a file is copied
 
When I copy a worksheet in Excel to a new Excel file, the year 2007, such as
1/12/2007 is automatically changed to 1/12/2003. Same goes for 2006, except
that 2/13/2006 becomes 2/13/2002.
Is there a setting I can change inside Excel 2003 to prevent this from
happening?

Since the difference is exactly 4 years, it sounds like a problem related to
the "1904 date system" option. Click on Tools/Options in Excel's menu, then
click on the Calculation tab on the dialog box box that appears. See if the
"1904 date system" CheckBox is checked. If so, perhaps unchecking this
option will correct the problem.
