What happens if you open two instances of the Excel application?

Do the spreadsheets have to be on the same Excel instance? If not, launching

Is there anyway to default Excel to open a new instance when a new file is
opened. The current default is to open the new spreadsheet in the same program. I have looked and looked but no way to set it to automatically open new excel instances by default.
