You can set custom to #;"("#")";#
But there is an easier way - can't find it though

How do you put negative/minus numbers in brackets
 
In the Format Cells dialog, with "Number" selected the third "negative
numbers" option shows parens (or brackets as they say in England, etc.). If
you do not see a bracketed format there you have to change your negative
number format for CURRENCY (not Numbers) under Windows Control Panel,
Regional Settings to use parens.
