Gridlines disappear when using "Fill"
 
When I format cells (fill) w/ color, my gridlines disappear.

That is the way Excel works. The fill color overlays the gridlines. Add
borders to the cells to make your own "gridlines"

I thought there might be another way. I tried that but it's cumbersome with
a large spreadsheet. Thanks!

Gridlines disappear when using "Fill"
 
You can create a toolbar that contains lots of border options.

Tools|Customize|toolbars tab|create a new toolbar
Then on the Commands tab, select Format category
Drag all the border icons you find to this new toolbar.
