Change a display
 
I do not even know what this is called, but I shall try anyway: I received an
excel table on which on the left side of the screen one can collaps or hide
certain collums by clicking on the - or + buttons. What is this called, and
how can I remove it?

Its called Group amd Outlining

To Remove - Choose Data Group and OUtline Clear Outline

Change a display
 
The view you are seeing is called OUTLINE VIEW. Depending upon how its been
set up you can remove it by clicking DATA, SUBTOTALS and then click the
REMOVE ALL command button.

Or click DATA and select GROUP AND OUTLINE and then select CLEAR OUTLINE

Change a display
 
Sounds like the Outline or Grouping feature.
Select all of your cells by clicking the gray square above row 1 and to the
lift of A. Then click on Data, Group and Outline, and select Ungroup.
