I started a new spreadsheet using the former spreadsheet and then saved over
the former spreadsheet. Can I save the former spreadsheet? |

Not unless you have an older copy of it somewhere, perhaps in a Backup

Not unless you have another copy somewhere such as a backup copy somewhere or perhaps as an attachment to an email you sent someone, or a copy on a thumbdrive or such somewhere.
