Depends on the version of excel you're using.

Tools|Autocorrect options|Autoformat as you type
Uncheck that "internet and network paths with hyperlinks" option.

(I think xl2002+...maybe xl2k????)

Or prefix your entry with an apostrophe:



or hit ctrl-z (edit|Undo) as soon as excel jumps in with the change.
