I have various data sets that I want to plot on a single 3D chart to compare
peak responses. Is this possible in excel?

What kind of 3D chart? Can you use the corresponding 2D chart type?

In general, you are better off not using any 3D charts, and especially not
Excel's 3D charts, which mostly consist of 2D data with a fake third
dimension.
