I want to do a blood pressure chart and on the x axis I want the days say
Monday, Tuesday, Wednesday and a subscale with a 24 hour clock so you can
look at the graph say over three days and see the day that a particular
measurment was made and if it is around say noon it would be half way along
that particular day.

In a line chart, Excel can give you nice formatting of dates, but it
assumes that every point during the day occurs at midnight (for some
reason it can't handle fractions).

But you can use an XY Scatter chart to render the date and time
correctly in the chart. When adjusting the scale, just enter the date
normally, like 5/21/05, and Excel will convert it to the whole number
units it uses to represent dates. Enter the time in hh:mm format too, or
use 0.25 for 6 am, 0.5 for noon, 0.75 for 6pm. You can't really get the
subscale you want, but at least you can approximate it using a custom
number format, like "ddd hh:mm" (ddd gives a 3-letter abbreviation for
the day, and it will appear in all labels.
