is it possible to plot 3-axis (x,y,z) charts in Excel?

You can make a surface chart but the axis are categorical not numerical
You need an add-in or supplementary app like SigmaPlot to make a real xyx
plot

Excel's closest alternatives are the 3D Column and Surface chart types.

For each, the x and y axes are categorical axes (equally-spaced text labels)
and only the z axis is a value (numerical) axis.
