Is there an easy way to copy the formatting of an entire chart to another
chart. Or can I change the defaults?

Chart Formatting
 
You can also copy one chart, then select another chart and use Paste Special
Formats to apply the formats to the second chart. Note: this also

overwrites axis and chart titles using the first chart's text.
