Does anyone know how to manipulate data to create a hypsographic curve
similar to those found in limnology textbooks. I cannot seem to get the depth
on the y scale and area on the z scale.

The surface chart in Excel is not a true 3d XYZ chart. You need even
spacing on the X and Y axes.
