Have I dreamed it, or can you 'sort' a chart series so that, for
example, the category with the highest value appears first on the axis,
the lowest last? It wouldn't be the first excel dream I've had...

If I have understand you correctly, you want you graph to appear in an
increasing or decreasing manner.
Before drawing your chart, sort your "Y" values. Then the graph will be
drawn in the sorted manner.
