Default Change Default Font in Excel for Document Only?

Right-click on a sheet tab and "Select all sheets"

CTRL + a(twice in 2003) to select all cells.

FormatCellsFontGaramondOk your way out.

Right-click on a sheet tab and "ungroup sheets"

Then excel will use that when you create a new workbook by clicking on the new

If you want the same thing when you add a new worksheet to an existing workbook,
