Default Can I change the Insert Function button to an equals sign?

In previous versions of Excel the formula bar used to have an equals sign
button which was useful when editing formula. In Excel 2002 this has been
replaced by the Insert Function icon. Is there any way of getting the equals
sign back?

Right-click on an empty part of a toolbar. Then select Customize from the
menu. In the Customize dialog box, select the Commands tab. In the left box,
select Insert. In the right box, scroll down until you find the equal sign
command. Drag it to a toolbar.
