Default Format cells to change a number from a positive to negative

Formatting does not change the value in a cell, merely how it looks.

However, you can achieve what you are trying to do by entering -1 into
a blank cell. Select that cell and click <copy then highlight all the
cells you wish to change and click Edit | Paste Special | Multiply
(check) then OK and <Esc.
